Banana bread energy balls taste just like your favorite banana bread recipe. Make a batch and enjoy them throughout the week.

* 2 cups of old-fashioned rolled oatmeal
1/2 cup mashed banana from 1 medium banana
1/2 cup almonds
* 1/2 cup pecans
* 1/3 cup maple syrup
* 1 teaspoon ground cinnamon
* 1/4 teaspoon vanilla extract
* 1/4 teaspoon salt

Blend all ingredients in a food processor for 10 seconds. Blend the mixture until it is smooth with some texture. When the dough is well blended, it will begin to roll in your food processor.

Use a cookie scoop to scoop a small ball and then roll it between your hands. Keep going until all of the dough is used up.

You can either enjoy the balls immediately or store them in a container. For soft balls, you can keep them at room temperature or put them in the refrigerator to make them a little firmer.

* If the balls are not holding together, it is likely that the texture is too large. For a finer texture, just put the mixture back into the food processor.
* They will feel a bit soft when you roll them first, but they’ll become firmer as the maple syrup absorbs into the oats.
